Side Dishes of Assamese Cuisine.
Both vegetaian and non-vegetarian side dishes are served in a complete Assamese plate. A few of the side dishes viz. Kharoli, Panitenga and pickles requires days of preparation while some others like Bor/Bora(Pakora), Pitika(mesh), and chutneys can be preparared and served insantly.
Try a few of the tasty side dishes those can can be prepared instantly and easily. The ingredients are handy and needs no special preparation.

Pitika
Vegetable Mesh
(Pitika)
Ingredients:
Brinjal(big) 1
Potato(optional) : 1
Onion (Chopped) : 1
Salt : According to taste
Mustard Oil : 1 tbsp
Green Chilly : 1 (chopped)
Procedure:

Roast the brinjal and peel off. Boil or roast the potato and peel off. Make mesh of the vegetables together and add salt, mustard oil and cut chilly. Instead of roasted brijal, boiled bittergourd or pukin can also be added with potato to make Pitika.
